Angle Cake

Ingredients
  • 1/2 cups sifted powdered sugar
  • 1 cup sifted cake flour or sifted all-purpose flour
  • 1 1/2 cups egg whites (11-12 large)
  • 1 1/2 tsp cream of tartar
  • 1 tsp vanilla
  • 1 cup granulated sugar

Directions

  1. Sift together powdered sugar and cake or all-purpose flour, repeat sifting twice.
  2. In a large mixer bowl beat egg whites, cream of tartar, vanilla and 1/4 teaspoon salt at medium speed of electric mixer till soft peaks form.
  3. Gradually add granulated sugar, about 2 tablespoons at a time.
  4. Continue beating till stiff peaks form.
  5. Sift about 1/4 of the flour mixture over whites; Fold in lightly by hand.
  6. If bowl is too full, transfer to a larger bowl.
  7. Repeat, folding in remaining flour mixture by 4ths.
  8. Turn into an ungreased 10" Tube pan.
  9. Bake on lowest rack in a 350°F oven about 40 minutes or till done.
  10. Invert cake in pan; Cool Completely.
  11. Loosen cake from pan; Remove.
